Minivend is looking for what you specify or defaulting to
Global::SendMail pretty early in bin/minivend. You'll need
an executable.
Make /usr/lib/sendmail as noted in previous reply:
#!/bin/sh

Be careful removing critical programs like sendmail; you might easily
open up worse holes particularly if you aren't comfortable looking at
code. For all I know that particular sendmail might get you blacklisted
in ORBS. YMMV.

Your /var/run or equivalent is misconfigured.

grep SendMail lib/Vend/Config.pm and bin/minivend.
