We use Access but have created multiple description fields and combine them
thusly:

[item-field description]
[item-field notes]
[item-field comment1]
[item-field comment2]

But, I am using Excel to keep my data which is limited to 255 chars.
Minivend does not care how long the field is I think but it is so
difficult to manage long descriptions. I prefer categorizing the
description fields myself. I also use Access to manage the data but I
Prefer FileMaker PRO. It is absolutely the best and NEVER adds funky chars.

Hope that helps
