Inventory Problem

Hi everyone,

We sell Jazz and Blues collectors-items: that means we only have 1 item in
stock for each listing.
However, we do have 20 items that won't be out of stock for the next couple
of years.

How can I easily create an inventory, that states that all the products can
only be bought 1 time, except for the ones mentioned above ?
