I had a similar problem, and if memory serves (I don't have any of this
stuff in front of me now) I wound up having to change the profile section
which is hard coded into the checkout page in the "simple" demo. Look at
the docs under the section about profiles. There is a built-in way to
validate Canadian postal codes. The docs have a good example which helped
me solve the problem. Hope this helps.
