Edit the mv_metadata entry for transactions::status - this is most easily 
done with the table editor in the UI, log in as a superuser and choose any 
record in the transactions table for editing, then click on the 'meta' link 
for the status field. You can add additional options there.  To make new 
submenus for your new options in the Order Management area, you'll need to 
add records to the icmenu table, following the example of the already 
existing entries for the Orders area.
