If you don't have "encrypt 1" in your route then your emails will not
be PGP/GnuPG encrypted.  This does not mean that the card details will
be sent, stored or made available in plain text.

If you are using an online payment service, then you may or may not
want encrypted emails.  Having said that, you may as well just
configure PGP or GnuPG and let Interchange encrypt the order details
anyway.
