I just added to catalog.cfg...

PageSelectField	template_page

... somewhere under # Various catalog settings.

If you already have a template_page column in products.txt, specify the unique flypage (eg. grandfather.html) there. If the field is empty, it will use the default flypage. 

I'm not an expert, but that worked well for me.
