There's a link at the top of the page, labelled "item editor", with a
"duck" icon to its left.  Click on that link and you'll be taken to
the item_select view editor.  You can add and/or remove the columns
you want to see in there.  The editor only affects the view; it won't
modify columns in the table.

The column width is dependent upon the column content.  I don't think
there's any fixed-width value you can specify in the "spreadsheet" view.
