Just to throw you off in another direction, I have minivend running happily
on a PC under Windows 95. I prefer this as a development environment because
I have all my web authoring tools under Windows. Instead of that Microsoft
Personal Server thing, I am running Apache for Windows 95. A few things
don't work in Minivend under windows - like automatically incrementing order
numbers, but most things do. It seems stable, but a bit slow when you have
Apache, MySQL, Minivend and the rest under Win 95, but is certainly works as
a test/ environment.

However, for a live environment connected to the net, I also use a LINUX
server and wouldn't bother with anything else.
