[mv] only one item per category allowed

We are trying to limit one item per category in the shopping cart. How would
we automatically remove/replace with the newly chosen item.
For Example a customer can only CHOOSE one rental plan and MUST choose one
item from 2 other categories to have a valid order.
29.00 Plan
999.00 Computer
100.00 Support Package
If a 200.00 Support Package was chosen it should replace the $100 Support
Package(different code).
Also if ALL Three Categories were not completed the order would not yet be
valid.
I searched the archives and couldn't find anything resembling this scenario.
Any ideas?
