You might want to upgrade to the latest (4.04, I believe). Take a look at
the mvend/etc/log_transaction file. This is where the order is written to
the transactions and orderline databases. The field references are made
within two [import][/import] tag pairs - one for each database file. Once
you have added the column(s) for your additional data, you would add
statements here for your new fields, following the example of what is
already there.
