We're pretty Linux-savvy around here, but unfortunately it isn't 
"our" server. Our client has a colocated server that was originally 
configured by the coloc facility. So we don't have a lot of faith in 
the original installation, either of Linux, nor Apache, nor Minivend. 
At this point, there is nobody who is officially "in charge" of 
sysadmin on the machine.

Whatever is going wrong, it isn't anything obvious. We aren't seeing 
any memory leaks in Apache or Minivend, and the machine has tons of 
power compared to the amount of work it does: hosting 4 low-traffic 
sites, 2 of which are Minivend stores. If we could isolate the 
problem to any aspect of the installation, the client could insist on 
amelioration by the coloc. Their budget won't accommodate having us 
do a clean install. (We've already put in mucho unpaid hours trying 
to verify that it isn't something weird about the websites 
themselves, which we developed.)
