There are innumerable ways in Minivend 4. Probably the one
that makes sense in this case is:

  $ cd MINIVEND_ROOT  # Not CATALOG_ROOT
  $ cat > etc/simple.after
  VendURL  http://www.whatevertestserver.com/cgi-bin/simple
  ^D

The test server would thereby set the URL after the catalog.cfg file is
read, overriding it.

Indeed, you can even set it on the command line:

  bin/minivend -restart simple:VendURL=http://www.whatever.com/cgi-bin/simple
