'nitems' is not a valid type for if, as far as I know.  Try this:

[if items][then]
         [if type=explicit compare="[calc][nitems] > 1[/calc]"]
                 products<br>
         [else]
                 product<br>
         [/else]
         [/if]
[/then]
[else]
no products<br>
[/else]
[/if]
