[ic] [item-modifier] will not display in checkout

Hmmm, are you passing the modifier along from the basket page form?

Like the following inside the item-list:

<INPUT TYPE=hidden NAME="[modifier-name engraving]" VALUE="[item-modifier 
engraving]">
