Pardon if I don't completely understand the question. It's not clear if
you want three different catalogs running with the same checkout, or just
three different product lines. If it's just three different product lines,
you could simply add a "productline" field to your products database and
have three different sections (pages) of the catalog - one for each
different product line. The search in each section would only return
products in its product line. Use coordinated searches if you want to
further divide each product line. It could look like a mall, but with a
common checkout.
