Should I copy all the files from the source machine, and then battle against configuration files? Or should I install minivend on the target machine, and try to set up the catalog imported instead?

I did this recently, and found it to be simplest to do the following:
1) Install the latest Minivend on the new machine
2) makecat for the store(s) you want
3) copy over from the original minivend system the following:
minivend.cfg
catalog.cfg
pages/*
products/*
products/ord/*
Just be sure to check all's well in minivend.cfg, and your catalog.cfg
files.
The down side of this is you lose temporary (orders and
dbuser) information, but you could copy over some of that too if you need
it. Your ordering numbers will be out too, but that's easily adjusted.
You could probably just as easily tar everything up and move it over, but
with the fresh installation you'll get the latest version, plus a clean
start.
